Behind the Scenes With Executive Sous Chef Zach Sass at Nashville Underground

Picture

Downtown Nashville isn't just a place where tourists go to explore the city. It's also where locals go to find great food, amazing music and spectacular city views. At Nashville Underground, guests enjoy all three. The restaurant/bar/live music venue, owned by brothers Gavin & Joey DeGraw, features 40,000 square feet of space across several floors- each with its own unique offerings.

As one of Nashville's newest hot spots, I wanted to learn more about the people who make it one of Music City's favorite places to grab hot chicken (it's the restaurant's signature dish) and more.
"The perfect place to sit and chill, party it up or just have a fun night out with friends"
Executive Sous Chef Zach Sass took me through the process of making one of the restaurant's best selling dishes: Mama Lynne's Truffle Mac & Cheese. It's one of many new menu items that keep customers coming back again and again. A new menu was actually just released, with tons of delicious cuisine like a selection of $5.99 sliders and wings. Nashville Underground is also the only place on Broadway where you can get bone-in chicken wings.

As a culinary school graduate, Zach Sass brings years of experience to the restaurant, which was evident as he made the tasty concoction. He knew his way around the kitchen like the back of his hand- the sign of a true professional! With all the ingredients prepped and ready to go, Zach worked his magic and the result was downright deliciousness! Here's a close up of the mac & cheese, to get your taste buds excited.

Enjoy it with grilled chicken, hot chicken or no chicken. It doesn't matter, it's good! And now that you've seen Zach make it, you can try the recipe at home. Or, come back for more anytime! And while you're at it, enjoy the rest of what Nashville Underground has to offer.

With three stages, an indoor fireplace, a mechanical bull, LED video dance floor and live music seven days a week, there is plenty to explore at Nashville Underground. In fact, it might take more than one visit to see it all! The lounge furniture, vibrant color scheme and retro feeling ambience make the joint the perfect place to sit and chill, party it up or just have a fun night out with friends.
One of the highlights of the restaurant is the double deck rooftop- the highest and largest on Broadway. The views of downtown can't be beat, and make a great backdrop for a visit to the restaurant- which is sure to be unforgettable.
