Two sisters. One dream. This is how Hillsboro Village's new fast-casual eatery, Greenery Co., began. Caroline Gaston and Whitney Abblitt are sisters and co-owners of the hot spot, which focuses on fresh, fast, and healthy meals. The duo - who share a passion for the Nashville food scene - are both Vanderbilt University graduates. They have combined their respective experiences in finance, entrepreneurship, and culinary education to turn their passion into an exciting - and delicious - new adventure.
Their mission? To make thoughtful choices simple. Greenery Co. is now officially open for business. Guests can enjoy dining in using social distancing guidelines, or order online and take their food to go. Medical professionals also have the option to have food delivered to designated drop sites at Vanderbilt Medical Center.

The menu was developed by Chef Barclay Stratton and features locally-sourced salads, bowls, snacks, and drinks. All food is purchased fresh and made from scratch daily. In addition to the standard menu items, seasonal offerings include carrot pimento cheese, roasted carrot soup, and cauli soup. Bakery bread is sold by the slice and guests can create a customized greenery that includes one base, one protein, and two toppings. This option is also available for kids.
Greenery Co.'s interior boasts classic southern charm with modern touches and was designed by local interior designer Sarah Bartholomew and local design studio Powell Architecture + Building Studio. The neutral color palette creates a serene environment with accents of soft blue, green, gold, brass, and rattan. A hand-painted mural by artist Maggie Sanger can be found at the entrance to the restaurant, and furniture crafted by Holler Design and Mesa Designs fills the dining room.
